this link to a list of graphic novels and academic books about, by, or featuring Jewish people and issues. Pekar, Eisner, Sturm, Spiegelman, Modan and Sfar are on the list, but there are several other authors and resources of which I had never heard.
This is definitely a link you'll want to click. I know I'll be revisiting it as I look for more graphic novels to read.
